Roasted Garlic, White chicken lasagna Soup

Yes, you read that right! Roasted Garlic, white chicken lasagna soup! Doesn’t that just sounds divine?!!! Well it is, and you are going to thank me if you make this recipe! We LOVED it and will for sure be making it again! If you are looking for the ultimate warm, cozy, comfort soup, here it is! There are lots of steps you can “shortcut” to make this easier or if you are just in the mood to get in the kitchen and make it from scratch, even better! Ingredients:

  • ½ cup roasted garlic cloves

  • 1 (16.9-ounce) jar prepared Alfredo sauce (Or you can make your own)

  • Boneless skinless chicken breasts, (chopped into 1-inch pieces)We used 2 chicken breast

  • 1 tablespoon EACH: olive oil AND all-purpose flour

  • 3 tablespoons butter

  • 4 ounces mushrooms, sliced

  • ½ cup onions, minced

  • 4 cups chicken stock (or broth) We used Better than Bouillon

  • 2 cups half and half (or whole milk)

  • 1 teaspoon EACH: garlic powder, dried basil AND Italian seasoning

  • ¼ teaspoon EACH: ground nutmeg AND red pepper flakes (more to taste)

  • ½ cup grated parmesan cheese

  • 10 lasagna noodles, broken into 4 pieces each (cooked) OR Cheese Tortellini would be awesome in this recipe!

  • 2 tablespoons chopped parsley, for serving
