EASY CHEESY ZUCCHINI BAKE

Warmer weather is here and I’m ready for all the zucchini and squash recipes! This one is light, full of flavor and so incredibly easy to make! B and I will be having this as a side dish all summer long! The hardest part of this recipe is slicing the vegetables!

Ingredients:

  • 2 medium zucchini, cut in slices or half-moon slices

  • 2 medium yellow squash, cut in slices or half-moon slices

  • 4 Tbs. chopped fresh basil

  • 2 Tbs. thinly sliced green onion

  • 1/2 tsp. dried thyme

  • 3/4 tsp. garlic powder

  • 1 cup grated mozzarella cheese

  • 1/2 cup coarsely grated Parmesan, plus a little more for the top if desired

  • salt and fresh ground black pepper to taste
