Crockpot Loaded Potato Soup

It’s not secret that a loaded baked potato soup is one of my all time favorite meals, and for years I’ve been making it the same way! I decided to switch it up and try a new variation of my recipe, and y’all, its my favorite ever! Can’t wait to make this all winter long! So warm and cozy! Oh and it’s in the crockpot!


Ingredients:

  • 1 32 oz. bag of frozen diced hash brown potatoes (the cubes)

  • 1 block of cream cheese

  • 1 32 oz. container of chicken broth

  • 1 can cream of chicken soup

  • season with Ranch seasoning, Garlic powder, Salt and Pepper

  • 1 package of bacon

  • 1 8oz. block of sharp cheddar cheese(shredded)

  • Sour Cream and chives for topping

Here’s how to make it:

To a lightly greased crockpot add entire bag of frozen hash browns, cream cheese, cream of chicken soup, and seasonings.

Cook on high for about 3 hours

While soup is in crockpot, shred your cheese and cook your bacon. I cut bacon into bite size pieces to cook.

After 3 hours, add 3/4 of bacon to crockpot and 3/4 of cheese. Reserve the extra for your toppings.

Stir and cook for an additional 30 mins-1 hour.

Serve and Enjoy! Top with extra bacon, cheese, sour cream, and chives!
