Cheese Tortellini, Sausage and Tomato Soup

A great family weeknight meal, or perfect for a gathering with friends, that’s easily prepared and sure to leave everyone with a smile, this soup is amazingly delicious. Tortellini filled with pillowy cheese, savory Italian sausage, luscious tomato soup with spinach, and a shower of parmesan to top it off, the elements of this soup are an absolute symphony of flavor!


Ingredients:

1 package of Italian sausage

Cheese tortellini (20oz package)

28oz can crushed tomatoes

Chicken broth (3 cups)

Heavy whipping cream (1 cup)

Garlic, 3-4 cloves

Fresh spinach

Italian seasoning (2 tsp, or to taste)

Parmesan cheese

Here’s How To Make It:

  1. Fully cook Italian sausage and set aside. We used our dutch oven to make this a one dish meal, removing most of the grease.

  2. Add crushed tomatoes and chicken broth, then bring to a boil. Use garlic press to add garlic, as well as Italian seasoning and black pepper. Add heavy cream and stir to combine. Reduce heat to maintain a gentle boil.

  3. Add package of cheese tortellini and cook for about 5 minutes, the return cooked Italian sausage to your vessel.

  4. Once tortellini is almost fully cooked, add about 2-3 handfuls of spinach and stir to combine. Continue cooking uncovered until tortellini is fully cooked and tender.

  5. Serve in your favorite soup bowl with grated parmesan cheese and enjoy!
